Ingredients
  

Salad Base
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup parsley chopped
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, bell pepper, and parsley.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  2. Taste and adjust seasoning if necessary.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
