Ingredients
  

Vegetables
  • 2 cups fresh spinach washed and chopped
  • 1 medium red onion thinly sliced
Cheeses
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
Tortillas
  • 4 large flour tortillas
Seasoning
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add sliced red onion and sauté until translucent, about 3 minutes.
  2. Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper.
Assemble the Quesadillas
  1. On one half of each tortilla, layer the spinach mixture, crumbled feta, and shredded mozzarella.
  2. Fold the tortilla over to cover the filling.
Cook the Quesadillas
  1. Wipe the skillet clean and return to medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted.
  2. Remove from skillet and let cool for a minute before slicing into wedges.
Serve
  1. Serve warm with your favorite dipping sauce or salsa.
