Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh Meyer lemon juice about 2-3 lemons
  • 1 teaspoon lemon zest freshly grated
Topping
  • 1 cup powdered sugar for dusting

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). Grease the baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the flour and salt, mixing until just combined.
  4. Press the mixture into the bottom of the prepared baking pan.
  5. Bake for 20 minutes or until lightly golden.
Make the Filling
  1. In a separate bowl, whisk together the granulated sugar and eggs until smooth.
  2. Add the flour, lemon juice, and lemon zest, whisking until well combined.
  3. Pour the filling over the baked crust.
  4. Return to the oven and bake for an additional 25 minutes, or until the filling is set.
Cool and Serve
  1. Remove from the oven and let cool completely in the pan.
  2. Once cooled, dust with powdered sugar and cut into squares.
  3. Serve and enjoy!
