Method
Prepare the Crust
- Preheat the oven to 350°F (175°C). Grease the baking pan.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the flour and salt, mixing until just combined.
- Press the mixture into the bottom of the prepared baking pan.
- Bake for 20 minutes or until lightly golden.
Make the Filling
- In a separate bowl, whisk together the granulated sugar and eggs until smooth.
- Add the flour, lemon juice, and lemon zest, whisking until well combined.
- Pour the filling over the baked crust.
- Return to the oven and bake for an additional 25 minutes, or until the filling is set.
Cool and Serve
- Remove from the oven and let cool completely in the pan.
- Once cooled, dust with powdered sugar and cut into squares.
- Serve and enjoy!
