Cupcake Batter
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 0.5 cups sparkling grape juice
  • 0.25 cups whole milk
  • 1 teaspoon vanilla extract
  • 0.5 cups peach puree
Frosting
  • 1 cup unsalted butter room temperature
  • 3-4 cups powdered sugar sifted
  • 3-4 tablespoons peach puree
  • 1-2 tablespoons sparkling grape juice
  • 1 pinch salt
  • fresh peach slices for garnish

Method
 

Cupcake Preparation
  1. Preheat oven to 350°F (175°C).
  2. Line muffin tin with cupcake liners.
  3. In a bowl, cream butter and sugar until fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. In another bowl, whisk flour, baking powder, and salt.
  6. Gradually add dry ingredients to wet, alternating with sparkling grape juice and milk.
  7. Fold in peach puree.
  8. Divide batter into liners, filling each 2/3 full.
  9. Bake for 18-20 minutes until a toothpick comes out clean.
  10. Cool in tin for 5 minutes, then transfer to a rack to cool completely.
Frosting Preparation
  1. For frosting, beat butter until creamy.
  2. Gradually add powdered sugar, peach puree, sparkling grape juice, and salt until smooth.
  3. Frost cooled cupcakes and garnish with peach slices.
