- Line a 9x9 inch baking dish with parchment paper.
- In a mixing bowl, combine Greek yogurt, peanut butter, honey, vanilla extract, and mix until smooth.
- Fold in mini chocolate chips if using.
- Pour the mixture into the prepared baking dish and smooth the top.
- Freeze for 4 to 6 hours or until solid.
- Lift the bars out using parchment paper and cut into desired sizes.
