  • 6 oz orzo pasta
  • 3 tbsp dairy-free pesto heaping
  • 1 tbsp extra virgin olive oil
  • 1/2 cucumber diced
  • 1/3 cup sundried tomatoes julienne
  • 1/3 cup dairy-free feta
  • 1 cup arugula
  • 1 cup chickpeas drained and rinsed
  • 2-3 tbsp parsley chopped
  • 1/2 lemon juiced
  • Salt to taste
  • Pepper to taste

Method
 

  1. Cook orzo according to package instructions; drain and cool.
