Method
Prepare the Chicken
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine breadcrumbs, grated Parmesan, garlic powder, salt, and pepper.
- Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated chicken breasts on a baking sheet and bake for 20-25 minutes until golden and cooked through.
Cook the Pasta
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta.
Combine and Serve
- In the same pot, add the cooked pasta and pesto sauce, tossing to combine. If needed, add reserved pasta water to loosen the sauce.
- Slice the crispy chicken and serve on top of the pesto pasta.
- Garnish with fresh basil and shaved Parmesan before serving.
