Ingredients
  

Pasta
  • 12 oz Pasta (e.g., spaghetti or penne) Cooked al dente
Pesto Sauce
  • 1 cup Pesto Sauce Store-bought or homemade
Chicken
  • 2 large Chicken Breasts Pounded to even thickness
  • 1 cup Breadcrumbs Panko preferred for extra crunch
  • 1/2 cup Parmesan Cheese Grated
  • 2 large Eggs Beaten
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Garnish
  • 1/4 cup Fresh Basil Chopped
  • 1/4 cup Parmesan Cheese Shaved

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine breadcrumbs, grated Parmesan, garlic powder, salt, and pepper.
  3. Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated chicken breasts on a baking sheet and bake for 20-25 minutes until golden and cooked through.
Cook the Pasta
  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain the pasta.
Combine and Serve
  1. In the same pot, add the cooked pasta and pesto sauce, tossing to combine. If needed, add reserved pasta water to loosen the sauce.
  2. Slice the crispy chicken and serve on top of the pesto pasta.
  3. Garnish with fresh basil and shaved Parmesan before serving.

Notes
