Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 oz cream cheese softened
  • 1 cup sugar
  • 3 teaspoons vanilla extract
  • 1 large egg beaten
  • 1/2 cup sour cream
  • 1 can (20 oz) crushed pineapple drained (reserve 2-3 tablespoons juice for glaze)
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons reserved pineapple juice

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, beat cream cheese and sugar until smooth. Add vanilla, egg, and sour cream, mixing well.
  4. Fold in crushed pineapple. Combine wet and dry ingredients until just mixed.
  5. Pour batter into greased loaf pan. Bake for 50-60 minutes until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a cooling rack.
  7. For the glaze, mix powdered sugar with reserved pineapple juice until smooth. Drizzle over cooled bread.
