Cottage Cheese Base
  • 2 cups cottage cheese preferably low-fat
  • 1 cup shredded mozzarella cheese for topping
  • 1 large egg beaten
  • 1 teaspoon Italian seasoning or to taste
  • 1 teaspoon garlic powder or to taste
Vegetable Toppings
  • 1 cup bell peppers diced
  • 1 cup spinach fresh or frozen
  • 1 cup sliced mushrooms optional
  • 1/2 cup black olives sliced
Sauce
  • 1 cup pizza sauce store-bought or homemade

Method
 

Prepare the Oven and Dish
  1. Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray.
  2. In a mixing bowl, combine cottage cheese, beaten egg, Italian seasoning, and garlic powder.
Combine Ingredients
  1. Add diced bell peppers, spinach, mushrooms, and black olives to the cottage cheese mixture. Stir until well combined.
Assemble the Bake
  1. Spread the mixture evenly in the greased baking dish. Pour pizza sauce over the top and sprinkle shredded mozzarella cheese.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
