  • 2 pieces boneless, skinless chicken breasts
  • 15 ounces salted pretzels crushed
  • ½ teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 pieces eggs whisked
  • Vegetable oil for frying
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 2 cups sharp cheddar cheese shredded
  • 2 tablespoons whole grain mustard
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ cup flat leaf parsley leaves chopped
  • ¼ small red onion finely chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken to even thickness, season with salt, pepper, and paprika.
  3. Set up breading station: flour in one bowl, whisked eggs in another, crushed pretzels in a third.
  4. Dredge chicken in flour, dip in eggs, and coat in pretzels. Place on a baking sheet.
  5. Bake for 20-25 minutes until golden and cooked through (165°F or 75°C).
  6. For the sauce: Heat butter in a skillet, add flour, and cook for 1 minute.
  7. Slowly whisk in milk and bring to a simmer. Stir in mustard and cheese until melted.
  8. Add paprika, cayenne, parsley, and onion. Mix well and season to taste.
  9. Serve chicken drizzled with sauce.
