Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Pound chicken to even thickness, season with salt, pepper, and paprika.
  3. Set up a breading station: flour in one bowl, whisked eggs in another, crushed pretzels in a third.
  4. Dredge chicken in flour, dip in eggs, and coat in pretzels. Place on a baking sheet.
  5. Bake for 20-25 minutes until golden and cooked through (165°F or 75°C).
Making the Sauce
  1. For the sauce: Heat butter in a skillet, add flour, and cook for 1 minute.
  2. Slowly whisk in milk and bring to a simmer. Stir in mustard and cheese until melted.
  3. Add paprika, cayenne, parsley, and onion. Mix well and season to taste.
