Method
Prepare the Oven and Baking Sheet
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together the sugar and cinnamon for rolling.
Mix Dry Ingredients
- In a mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Mix Wet Ingredients
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Add the pumpkin puree, egg, and vanilla extract, mixing until well combined.
Combine Mixtures
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape Cookies
- Using a cookie scoop, drop dough onto the prepared baking sheet.
- Roll each dough ball in the cinnamon-sugar mixture before placing it back on the sheet.
Bake
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
