  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 medium carrot, peeled and sliced
  • 1 can (14 oz) diced tomatoes
  • 3 cups low-sodium chicken broth
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped optional
  • Salt and pepper to taste
  • 1-2 fresh chili peppers, finely chopped optional

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper until soft.
  2. Add garlic, chili powder, smoked paprika, and cayenne; cook for 1 minute.

  4. Add shrimp and cook until pink and opaque, about 3-5 minutes.
  5. Stir in lime juice and season with salt and pepper. Garnish with cilantro if desired.
