Ingredients
  

  • 2 blocks extra-firm tofu cubed
  • 1.5 cups pineapple chunks
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 small red onion chopped
  • 2 tbsp oil
  • 0.25 cups soy sauce or tamari
  • 2 tbsp maple syrup or brown sugar
  • 2 tbsp pineapple juice
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch optional
  • Sesame seeds for garnish
  • Green onions for garnish

Method
 

  1. Preheat oven to 425°F and line sheet pan.
  2. Add tofu, pineapple, and vegetables to pan.
  3. Whisk sauce ingredients and pour over mixture.
  4. Toss to coat and spread evenly.
  5. Roast for 20 minutes, stir, then roast for another 10–15 minutes.
  6. Garnish with sesame seeds and green onions.
  7. Serve warm.
