Sweet Potatoes
  • 4 medium sweet potatoes peeled and cubed
Olive Oil
  • 2 tablespoons olive oil extra virgin
Salt
  • 1 teaspoon salt to taste
Pepper
  • 1/2 teaspoon black pepper freshly ground
Paprika
  • 1 teaspoon paprika optional for flavor

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. In a mixing bowl, toss the sweet potatoes with olive oil, salt, pepper, and paprika until evenly coated.
Roasting
  1. Spread the sweet potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  3. Remove from the oven and let cool slightly before serving.
