Sweet Potatoes
  • 2 medium sweet potatoes peeled and sliced into rounds
Olive Oil
  • 2 tablespoons olive oil for roasting
Honey
  • 2 tablespoons honey for drizzling
Feta Cheese
  • 1/2 cup feta cheese crumbled
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1/2 teaspoon black pepper to taste
Fresh Parsley
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
Roasting
  1. Spread the sweet potato rounds in a single layer on the prepared baking sheet.
  2. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and golden brown.
Finishing Touches
  1. Remove the sweet potatoes from the oven and drizzle with honey.
  2. Sprinkle crumbled feta cheese and chopped parsley on top before serving.
