Method
Prepare the Filling
- In a skillet over medium heat, cook the Italian sausage until browned and fully cooked, breaking it apart as it cooks.
- In a mixing bowl, combine the cooked sausage, softened cream cheese, shredded cheddar cheese, garlic powder, and black pepper. Mix until well combined.
Make the Biscuit Dough
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined. Do not overmix.
Assemble the Biscuit Bites
- Preheat the oven to 400°F (200°C).
- On a floured surface, roll out the biscuit dough to about 1/4 inch thick.
- Cut the dough into squares or circles, about 3 inches in size.
- Place a spoonful of the sausage and cream cheese filling in the center of each piece of dough.
- Fold the dough over the filling and pinch to seal, then place on a baking sheet lined with parchment paper.
Bake
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
