Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold, cubed
  • 3/4 cup milk whole or buttermilk
Filling
  • 1 lb Italian sausage casing removed
  • 8 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp black pepper

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the Italian sausage until browned and fully cooked, breaking it apart as it cooks.
  2. In a mixing bowl, combine the cooked sausage, softened cream cheese, shredded cheddar cheese, garlic powder, and black pepper. Mix until well combined.
Make the Biscuit Dough
  1. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the milk until just combined. Do not overmix.
Assemble the Biscuit Bites
  1. Preheat the oven to 400°F (200°C).
  2. On a floured surface, roll out the biscuit dough to about 1/4 inch thick.
  3. Cut the dough into squares or circles, about 3 inches in size.
  4. Place a spoonful of the sausage and cream cheese filling in the center of each piece of dough.
  5. Fold the dough over the filling and pinch to seal, then place on a baking sheet lined with parchment paper.
Bake
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
  2. Remove from the oven and let cool slightly before serving.

Notes

These biscuit bites can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
