Prepare the Ingredients
- Slice the Italian sausage, peel and cube the sweet potatoes, chop the bell pepper and onion.
Cook the Sausage
- In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Add Vegetables
- Add the chopped onion, bell pepper, and sweet potatoes to the skillet. Stir well and cook for another 10-15 minutes, or until the sweet potatoes are tender.
Make the Honey Garlic Sauce
- In a small bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar.
Combine and Serve
- Pour the honey garlic sauce over the sausage and vegetable mixture. Stir to combine and cook for an additional 2-3 minutes. Serve warm.
