  • 1 lb Italian sausage sliced
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil for cooking
  • 1 cup bell pepper chopped
  • 1 cup onion chopped
Honey Garlic Sauce
  • 1/4 cup honey
  • 3 tbsp soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tbsp apple cider vinegar

Method
 

Prepare the Ingredients
  1. Slice the Italian sausage, peel and cube the sweet potatoes, chop the bell pepper and onion.
Cook the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Add Vegetables
  1. Add the chopped onion, bell pepper, and sweet potatoes to the skillet. Stir well and cook for another 10-15 minutes, or until the sweet potatoes are tender.
Make the Honey Garlic Sauce
  1. In a small bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar.
Combine and Serve
  1. Pour the honey garlic sauce over the sausage and vegetable mixture. Stir to combine and cook for an additional 2-3 minutes. Serve warm.
