Ingredients
  

Vegetables
  • 2 medium zucchini sliced into half-moons
  • 8 ounces mushrooms sliced
  • 1 medium onion sliced
Seasoning
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional

Method
 

Prepare the Vegetables
  1. Wash and slice the zucchini, mushrooms, and onion.
  2. Set aside the sliced vegetables.
Sauté the Vegetables
  1. Heat olive oil in a skillet over medium heat.
  2. Add the sliced onions and sauté for 3-4 minutes until they start to soften.
  3. Add the mushrooms and cook for another 3-4 minutes until they release their moisture.
  4. Finally, add the zucchini and season with salt, pepper, and garlic powder.
  5. Sauté for an additional 5-6 minutes until the zucchini is tender but still crisp.
Serve
  1. Remove from heat and serve warm as a side dish.
