  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/4 cup chopped green onions

  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground fennel seeds, toasted
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp crushed pepper flakes

Method
 

Baking Instructions
  1. Preheat oven to 375°F (190°C).
  2. Prepare muffin tin with baking paper or spray.
  3. Mix flour, baking powder, garlic powder, and salt in a bowl.
  4. In another bowl, beat eggs and mix with cottage cheese, olive oil, and green onions.
  5. Combine wet and dry ingredients, stirring until mixed.
  6. Fold in grated cheese.
  7. Spoon batter into muffin tin, filling each cup 2/3 full.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool in the tin for 5 minutes before transferring to a wire rack.
