Prepare the Seafood Filling
- In a large skillet, melt butter over medium heat. Add onion and garlic, sauté until translucent.
- Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream.
- Add shrimp, lobster, peas, carrots, Old Bay seasoning, salt, and pepper. Cook until shrimp are pink and mixture thickens, about 5-7 minutes.
- Transfer the seafood mixture to a baking dish and set aside.
Make the Cheddar Bay Biscuits
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine flour, baking powder, garlic powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs. Stir in cheddar cheese.
- Add milk gradually until a dough forms. Do not overmix.
- Drop spoonfuls of biscuit dough over the seafood filling in the baking dish.
Bake the Pot Pie
- Bake in the preheated oven for 20-25 minutes or until biscuits are golden brown.
- Remove from oven and let cool for a few minutes before serving.
