Ingredients
  

Seafood Filling
  • 1 lb shrimp, peeled and deveined
  • 1 lb lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup frozen peas and carrots
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Old Bay seasoning
  • 1 tsp salt
  • 1 tsp black pepper
Cheddar Bay Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup cold butter, cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk

Method
 

Prepare the Seafood Filling
  1. In a large skillet, melt butter over medium heat. Add onion and garlic, sauté until translucent.
  2. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream.
  3. Add shrimp, lobster, peas, carrots, Old Bay seasoning, salt, and pepper. Cook until shrimp are pink and mixture thickens, about 5-7 minutes.
  4. Transfer the seafood mixture to a baking dish and set aside.
Make the Cheddar Bay Biscuits
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, baking powder, garlic powder, and salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Stir in cheddar cheese.
  4. Add milk gradually until a dough forms. Do not overmix.
  5. Drop spoonfuls of biscuit dough over the seafood filling in the baking dish.
Bake the Pot Pie
  1. Bake in the preheated oven for 20-25 minutes or until biscuits are golden brown.
  2. Remove from oven and let cool for a few minutes before serving.
