Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
Proteins
  • 1 cup salami sliced
  • 1 cup mozzarella balls bocconcini or ciliegine
Olives and Artichokes
  • 1/2 cup black olives pitted and sliced
  • 1/2 cup artichoke hearts quartered
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Ingredients
  1. Wash and dry the mixed greens, then place them in a large mixing bowl.
  2. Chop the cherry tomatoes, cucumber, and bell pepper, and add them to the bowl.
  3. Slice the salami and add it along with the mozzarella balls, black olives, and artichoke hearts.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine all ingredients.
  2. Serve immediately or refrigerate for up to 30 minutes before serving.
