  • 4 cups broccoli florets fresh, chopped
  • 1 cup carrots shredded
  • 1/2 cup red onion finely chopped
  • 1/2 cup sunflower seeds unsalted
  • 1/2 cup dried cranberries optional
Dressing Ingredients
  • 1/4 cup Greek yogurt plain
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the broccoli florets, shredded carrots, red onion, sunflower seeds, and dried cranberries.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, poppy seeds, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the salad and toss until everything is evenly coated.
  2. Serve immediately or refrigerate for up to 30 minutes before serving to allow flavors to meld.
