Ingredients
  

Chicken and Sauce
  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup hot honey store-bought or homemade
  • 1/4 cup soy sauce low sodium recommended
  • 2 tbsp apple cider vinegar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
Sandwich Assembly
  • 4 buns soft sandwich buns preferably brioche
  • 1/2 cup coleslaw for topping
  • 1/4 cup pickles sliced, optional

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine hot honey, soy sauce, apple cider vinegar, garlic powder, onion powder, black pepper, and salt.
  2. Add the chicken thighs to the slow cooker and pour the sauce over the chicken, ensuring it's well coated.
Cook the Chicken
  1. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender and easily shredded.
Shred and Serve
  1. Once cooked, use tongs to remove the chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker and stir to coat in the sauce.
  3. Serve the hot honey chicken on soft buns, topped with coleslaw and pickles if desired.

Notes
