Ingredients
  

Beef
  • 2 pounds chuck roast trimmed of excess fat
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 can diced tomatoes 14.5 oz can
Optional Toppings
  • 1 cup shredded cheese for serving
  • 1 cup sour cream for serving
  • 1 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Beef
  1. Season the chuck roast with chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
  2. Place the seasoned beef in the slow cooker.
Add Vegetables
  1. Add sliced onion, minced garlic, beef broth, and diced tomatoes to the slow cooker.
Cook
  1. Cover and cook on low for 8 hours or until the beef is tender and shreds easily with a fork.
Shred the Beef
  1. Remove the beef from the slow cooker and shred it using two forks.
  2. Return the shredded beef to the slow cooker and mix it with the juices.
Serve
  1. Serve the shredded beef in tacos, burritos, or over rice, topped with cheese, sour cream, and cilantro if desired.
