Ingredients
  

Chicken and Sauce
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese plus extra for serving
  • 2 teaspoons dried Italian herbs or a mix of oregano, basil, and thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Orzo and Vegetables
  • 1 cup orzo pasta
  • 1 cup frozen peas thawed
  • 1 cup chopped spinach fresh or frozen
  • 1 cup chopped carrots fresh or frozen

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the chicken broth, heavy cream, Parmesan cheese, Italian herbs, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
Cook the Chicken
  1. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Add Orzo and Vegetables
  1. After 4 hours, add the orzo, peas, spinach, and carrots to the slow cooker.
  2. Stir well to combine, cover, and cook for an additional 30 minutes on low, or until the orzo is tender.
Serve
  1. Once cooked, shred the chicken in the slow cooker and mix it with the orzo and sauce.
  2. Serve warm, garnished with extra Parmesan cheese if desired.

Notes
