Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cubed
Dairy
  • 1/2 cup milk whole or 2%
  • 4 ounces smoked Gouda cheese shredded
  • 4 tablespoons butter unsalted
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Potatoes
  1. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.
  3. Drain the potatoes in a colander and return them to the pot.
Mash and Mix
  1. Add the butter, milk, smoked Gouda cheese, salt, and pepper to the drained potatoes.
  2. Mash the potatoes until smooth and creamy, adjusting the milk for desired consistency.
Serve
  1. Taste and adjust seasoning if necessary. Serve warm as a side dish.
