Ingredients
  

Shrimp and Vegetables
  • 1 lb large shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh or frozen
  • 1 cup red bell pepper diced
  • 1 cup avocado diced
  • 1 cup mixed salad greens
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 clove garlic minced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

Prepare the Shrimp
  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, cumin, chili powder, salt, and pepper.
  3. Grill the shrimp for 2-3 minutes on each side until pink and cooked through.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper.
Assemble the Salad
  1. In a large mixing bowl, combine the salad greens, cherry tomatoes, corn, red bell pepper, and avocado.
  2. Add the grilled shrimp on top.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately on a platter.
