Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced thinly
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cilantro chopped
Dressing Ingredients
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey or agave syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. Slice the cucumbers thinly and place them in a mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Thinly slice the red onion and add it to the bowl.
  4. Chop the cilantro and add it to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sriracha, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad ingredients and toss to combine.
  2. Let the salad sit for 5 minutes to allow the flavors to meld before serving.
