Ingredients
  

Coconut Rice
  • 1 cup jasmine rice rinsed
  • 1 cup coconut milk full-fat
  • 1 cup water
  • 1 teaspoon salt
Spicy Salmon
  • 4 fillets salmon skinless
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon honey
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
  • 2 tablespoons olive oil for cooking
Toppings
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 avocado sliced
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare Coconut Rice
  1. In a rice cooker, combine jasmine rice, coconut milk, water, and salt. Cook according to rice cooker instructions.
  2. Once cooked, fluff the rice with a fork and let it sit covered for 5 minutes.
Cook Spicy Salmon
  1. In a mixing bowl, whisk together soy sauce, sriracha, honey, ginger, and garlic.
  2. Add the salmon fillets to the bowl and marinate for 10 minutes.
  3. Heat olive oil in a skillet over medium heat. Add the marinated salmon and cook for about 4-5 minutes on each side, or until cooked through.
Assemble Bowls
  1. In serving bowls, place a generous scoop of coconut rice.
  2. Top with cooked salmon, cucumber, carrots, avocado, and sprinkle with green onions and sesame seeds.
  3. Serve immediately and enjoy!

Notes

Feel free to adjust the spice level by adding more or less sriracha. You can also add other vegetables like bell peppers or radishes for extra crunch.
