Ingredients
  

Vegetables
  • 2 cups fresh spinach chopped
  • 1 cup chopped onion optional
  • 1 cup chopped bell pepper optional
Dairy
  • 6 large eggs
  • 1 cup milk whole or low-fat
  • 1 cup shredded mozzarella cheese
  • 1 cup feta cheese crumbled
Baking Essentials
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional
  • 1 teaspoon olive oil for greasing

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil.
Sauté the Vegetables
  1. In a skillet over medium heat, sauté the chopped onion and bell pepper until softened, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat.
Mix the Egg Mixture
  1. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
Combine Ingredients
  1. Add the sautéed vegetables and both cheeses to the egg mixture. Stir until evenly distributed.
Bake the Casserole
  1. Pour the mixture into the prepared baking dish. Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
Serve
  1. Let the casserole cool for a few minutes before slicing. Serve warm.
