Ingredients
  

Filling
  • 2 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1 cup feta cheese crumbled
  • 1 large egg beaten
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Pastry
  • 1 package puff pastry thawed
  • 1 tablespoon olive oil

Method
 

Prepare the Filling
  1. In a mixing bowl, combine chopped spinach, ricotta cheese, feta cheese, beaten egg, minced garlic, salt, and black pepper. Mix well until combined.
  2. Set the filling aside.
Prepare the Pastry
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick.
  3. Cut the pastry into squares, approximately 4x4 inches.
Assemble the Puffs
  1. Place a spoonful of the spinach filling in the center of each pastry square.
  2. Fold the pastry over to form a triangle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  3. Brush the tops with olive oil for a golden finish.
Bake
  1. Arrange the puffs on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20-25 minutes or until golden brown.
  3. Remove from the oven and let cool slightly before serving.

Notes

These spinach puffs can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
