Ingredients
  

Steak and Rice
  • 1 lb flank steak sliced into thin strips
  • 1 cup white rice uncooked
  • 2 cups beef broth
  • 1 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Queso Sauce
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 2 jalapeño finely chopped
  • 1 cup milk whole or 2%
  • 1 tbsp cornstarch to thicken
  • 1 tbsp salsa optional for flavor
Toppings
  • 1 cup fresh cilantro chopped
  • 1 avocado sliced for garnish
  • 1 lime cut into wedges for serving

Method
 

Cook the Rice
  1. In a pot, bring the beef broth to a boil. Add the rice, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender.
Prepare the Steak
  1. Heat olive oil in a skillet over medium-high heat. Season the steak strips with salt and pepper, then add to the skillet. Cook for 5-7 minutes until browned and cooked to your liking. Remove from heat.
Make the Queso Sauce
  1. In a saucepan, combine milk and cornstarch over medium heat. Stir until thickened. Add cheddar and Monterey Jack cheese, stirring until melted. Mix in jalapeño and salsa if using.
Assemble the Dish
  1. In a serving dish, layer the cooked rice, top with steak strips, and pour the queso sauce over everything. Garnish with cilantro, avocado slices, and lime wedges.

Notes
