Ingredients
  

Butter Chicken
  • 1 lb chicken thighs boneless, skinless, cut into bite-sized pieces
  • 1 cup butter unsalted
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 1 inch ginger fresh, grated
  • 2 tbsp garam masala
  • 1 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 can tomato puree 15 oz
  • 1 cup heavy cream
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 2 tbsp fresh cilantro chopped, for garnish
Rice
  • 2 cups basmati rice rinsed
  • 4 cups water
  • 1 tsp salt to taste

Method
 

Prepare the Rice
  1. In a pot, combine the rinsed basmati rice, water, and salt. Bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
Cook the Butter Chicken
  1. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Sprinkle in the garam masala, coriander powder, and cumin powder, stirring to coat the chicken.
  5. Pour in the tomato puree and bring to a simmer. Cook for 15 minutes.
  6. Stir in the heavy cream and season with salt and black pepper. Simmer for an additional 10 minutes.
  7. Garnish with chopped cilantro before serving.
