Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breasts sliced into strips
  • 2 tbsp olive oil for grilling
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise for dressing
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp cilantro chopped
  • 1 tbsp lime juice for flavor
  • 1/2 tsp smoked paprika
Rice Base
  • 1 cup white rice uncooked
  • 2 cups water for cooking rice
  • 1/2 tsp salt
Toppings
  • 1 avocado sliced for garnish
  • 1/4 cup green onions sliced
  • 1 lime cut into wedges for serving

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. In a rice cooker, combine the rice, water, and salt. Cook according to the rice cooker's instructions.
  2. Once cooked, fluff the rice with a fork and set aside.
Marinate and Grill the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, and salt. Add the chicken strips and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest.
Prepare the Street Corn
  1. Grill the corn until charred, about 10 minutes. Remove from heat and let cool slightly before cutting the kernels off the cob.
  2. In a bowl, mix the corn kernels with mayonnaise, cotija cheese, cilantro, lime juice, and smoked paprika.
Assemble the Bowl
  1. In each serving bowl, layer the cooked rice, grilled chicken, and street corn mixture.
  2. Top with avocado slices, green onions, and lime wedges. Serve immediately.
