Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of your choice
Sauce
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 3 cloves garlic minced
  • 1/4 cup olive oil from the sun-dried tomatoes
  • 1/2 tsp red pepper flakes optional for heat
  • 1/2 cup fresh basil chopped
  • 1/2 cup parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  2. Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.
Combine and Serve
  1. Add the drained pasta to the skillet and toss to combine with the sauce. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  2. Stir in the fresh basil and season with salt and pepper to taste. Serve topped with grated parmesan cheese.
