Ingredients
  

Chicken and Sauce
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup cottage cheese low-fat or regular
  • 1 cup marinara sauce store-bought or homemade
  • 1 cup mozzarella cheese shredded
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Pasta
  • 8 ounces whole wheat pasta or pasta of choice
Garnish
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon parmesan cheese grated

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken
  1. In a large skillet over medium heat, season the chicken breasts with salt, pepper, Italian seasoning, and garlic powder. Cook for about 6-7 minutes on each side until cooked through and no longer pink in the center.
Assemble the Dish
  1. Once the chicken is cooked, remove it from the skillet and slice it into strips. In the same skillet, add the marinara sauce and cottage cheese, stirring to combine. Return the chicken to the skillet and top with shredded mozzarella cheese.
Finish Cooking
  1. Cover the skillet and let it cook for an additional 5-7 minutes until the cheese is melted and bubbly.
Serve
  1. Serve the chicken and sauce mixture over the cooked pasta. Garnish with fresh basil and grated parmesan cheese.
