Prepare the Marinade
- In a mixing bowl, combine orange juice, soy sauce, honey, minced garlic, grated ginger, black pepper, and salt. Whisk until well blended.
- Add chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Roast the Chicken
- Preheat the oven to 400°F (200°C).
- Place marinated chicken thighs in a roasting pan, skin side up. Pour remaining marinade over the chicken.
- Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste the chicken with the pan juices halfway through cooking for extra flavor.
Serve
