Ingredients
  

Chicken and Marinade
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup orange juice freshly squeezed
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
Garnish
  • 1 orange orange slices for garnish
  • 2 tablespoons fresh cilantro chopped

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine orange juice, soy sauce, honey, minced garlic, grated ginger, black pepper, and salt. Whisk until well blended.
  2. Add chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Roast the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Place marinated chicken thighs in a roasting pan, skin side up. Pour remaining marinade over the chicken.
  3. Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
  4. Baste the chicken with the pan juices halfway through cooking for extra flavor.
Serve
  1. Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
  2. Garnish with orange slices and chopped cilantro before serving.
