Ingredients
  

Taco Shells
  • 8 pieces soft corn tortillas
Egg Mixture
  • 6 large eggs
  • 1/4 cup milk whole or skim
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup diced bell pepper any color
  • 1/2 cup diced onion
Toppings
  • 1/2 cup sour cream for serving
  • 1/4 cup sliced jalapeños optional
  • 1/4 cup chopped cilantro for garnish
  • 1/2 cup salsa for serving

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with cooking spray.
Make the Egg Mixture
  1. In a mixing bowl, whisk together eggs and milk until well combined.
  2. Stir in the cheese, bell pepper, and onion.
Assemble the Tacos
  1. Place the tortillas in the baking dish, overlapping slightly.
  2. Pour the egg mixture evenly over the tortillas.
Bake the Tacos
  1. Bake in the preheated oven for 25 minutes, or until the eggs are set.
Serve
  1. Remove from the oven and let cool slightly.
  2. Top with sour cream, jalapeños, cilantro, and salsa before serving.
