Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken thighs cut into 1-inch pieces
  • 1/4 cup soy sauce low sodium recommended
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon cornstarch optional, for thickening
Vegetables (optional)
  • 1 bell pepper red cut into 1-inch pieces
  • 1 cup zucchini sliced into rounds
  • 1 cup red onion cut into wedges
Garnish
  • 2 tablespoons sesame seeds toasted
  • 2 scallions sliced for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and cornstarch until well combined.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Assemble the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken pieces onto the skewers, alternating with pieces of bell pepper, zucchini, and red onion if desired.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Lightly oil the grill grates.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes.
  2. Sprinkle with toasted sesame seeds and sliced scallions before serving.
