Prepare the Ingredients
- Wash and slice all the vegetables: tomato, cucumber, bell pepper, and avocado.
- Rinse the spinach leaves and pat them dry.
Assemble the Sandwich
- Spread hummus on one side of each slice of bread.
- Layer the spinach, sliced tomato, cucumber, bell pepper, and avocado on four slices of bread.
- Sprinkle salt and pepper over the vegetables.
- Top with the remaining slices of bread, hummus side down.
Serve
- Cut the sandwiches in half and serve immediately.
