Ingredients
  

Bread
  • 8 slices whole grain bread or your choice of bread
Vegetables
  • 1 cup spinach leaves fresh
  • 1 medium tomato sliced
  • 1 medium cucumber sliced
  • 1 medium bell pepper sliced
  • 1 medium avocado sliced
Spreads
  • 1/2 cup hummus any flavor
  • 2 tablespoons mustard optional
Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste

Method
 

Prepare the Ingredients
  1. Wash and slice all the vegetables: tomato, cucumber, bell pepper, and avocado.
  2. Rinse the spinach leaves and pat them dry.
Assemble the Sandwich
  1. Spread hummus on one side of each slice of bread.
  2. Layer the spinach, sliced tomato, cucumber, bell pepper, and avocado on four slices of bread.
  3. Sprinkle salt and pepper over the vegetables.
  4. Top with the remaining slices of bread, hummus side down.
Serve
  1. Cut the sandwiches in half and serve immediately.
