Bread
  • 4 slices Whole grain bread
Toppings
  • 1 cup Cottage cheese Low-fat preferred
  • 2 medium Tomatoes Sliced
  • 1 tablespoon Olive oil Optional for drizzling
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
  • 1 tablespoon Fresh basil Chopped, for garnish

Method
 

Prepare the Toast
  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, slice the tomatoes.
Assemble the Toast
  1. Spread a generous amount of cottage cheese on each slice of toasted bread.
  2. Top with sliced tomatoes, sprinkle with salt and black pepper.
  3. Drizzle with olive oil if desired and garnish with fresh basil.
