Preparation
- Preheat oven to 400°F (200°C). Bake potatoes for 45-60 minutes until tender.
- In a skillet, melt butter and sauté sweet onion and garlic until soft.
- Mix in 1/4 cup green onions, Cajun seasoning, hot sauce, crawfish (or shrimp), salt, and pepper.
- Add sour cream and cheeses; combine well.
- Slice potatoes in half and scoop out flesh, mixing with seafood filling.
- Stuff potato skins with the mixture, mounding slightly.
- Return to oven and bake for 15-20 minutes at 350°F (175°C) until cheese is melted.
- Garnish with remaining green onions before serving.
