Potato Base
  • 4 large russet potatoes
Filling
  • 3 tablespoons butter
  • 1/2 cup sweet onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped green onions, divided
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon hot sauce
  • 1 pound crawfish tails (or shrimp) substitution for protein
  • Salt to taste
  • Pepper to taste
  • 1/2 cup sour cream
  • 1/2 cup shredded Fiesta blend cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Additional chopped green onions, garnish optional

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Bake potatoes for 45-60 minutes until tender.
  2. In a skillet, melt butter and sauté sweet onion and garlic until soft.
  3. Mix in 1/4 cup green onions, Cajun seasoning, hot sauce, crawfish (or shrimp), salt, and pepper.
  4. Add sour cream and cheeses; combine well.
  5. Slice potatoes in half and scoop out flesh, mixing with seafood filling.
  6. Stuff potato skins with the mixture, mounding slightly.
  7. Return to oven and bake for 15-20 minutes at 350°F (175°C) until cheese is melted.
  8. Garnish with remaining green onions before serving.
