Ingredients
  

Cookie Base
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Filling
  • 1/2 cup caramel sauce store-bought or homemade
  • 1/4 cup chopped peanuts optional
Topping
  • 1/2 cup chocolate chips
  • 1 tablespoon vegetable oil

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract, and mix until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop the cookie dough into a greased muffin tin, filling each cup about halfway.
Bake the Cookie Cups
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Remove from the oven and let cool for 5 minutes.
  3. Using the back of a spoon, press down the center of each cookie to create a cup shape.
Add Filling and Topping
  1. Fill each cookie cup with caramel sauce and sprinkle with chopped peanuts if desired.
  2. In a microwave-safe bowl, combine chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until smooth.
  3. Drizzle the melted chocolate over the filled cookie cups.
  4. Allow to cool completely before serving.
