  • 1 cup vegan mayonnaise
  • 1 tablespoon Italian flat-leaf parsley, finely chopped
  • 1.5 teaspoons dried dill
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 4 cups broccoli and carrots, finely chopped
  • 1 cup vegan cheddar cheese, shredded
  • 4 tortillas flour tortillas, 8-inch size

Method
 

  1. In a bowl, mix vegan cream cheese, vegan mayonnaise, parsley, dill, garlic powder, onion powder, salt, and pepper until smooth.

  3. Spread filling evenly over tortillas, leaving edges clear.
  4. Roll tortillas tightly into logs and wrap in plastic wrap.
  5. Chill for 30 minutes, then slice into pinwheels.
