Ingredients
  

Beef and Vegetables
  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 4 medium carrots sliced
  • 3 medium potatoes diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup frozen peas added at the end

Method
 

Prepare Ingredients
  1. Chop the beef into 1-inch cubes and season with salt and pepper.
  2. Slice the carrots, dice the potatoes, chop the onion, and mince the garlic.
Combine in Crockpot
  1. Place the beef, carrots, potatoes, onion, and garlic into the crockpot.
  2. Add the beef broth, water, tomato paste, thyme, and rosemary.
Cook
  1. Stir to combine all ingredients well.
  2. Cover and cook on low for 8 hours or high for 4 hours.
Finish Stew
  1. About 30 minutes before serving, add the frozen peas to the stew.
  2. Stir and let cook until peas are heated through.
Serve
  1. Ladle the stew into bowls and enjoy warm.
